Negros Occidental's most famous dish is inasal-barbecued chicken marinated in coconut vinegar, soy sauce, ginger, garlic, and spices and then basted with achuete oil to give it a reddish color.
☻Manokan
All 22 stalls in Manokan Country have their own version of inasal, with special marinades to suit your taste. People ofen visit Aida's stall, the oldest and biggest of the lot.
Piaya, a crisp, flaky pastry filed with muscovado (raw brown sugar) and sprinkled with sesame seeds, is the region's number one delicacy. It is cooked on the griddle like a pancake. Piaya was originally made in Sugarlandia, and the bakery satill makes it like no other.
